Cadillac AOC

Recent AOC, only created in 1973, this appellation is located in the region of Premières Côtes de Bordeaux. Despite the recent nomination, the appellation Cadillac possesses a thousand year-old viticultural heritage that goes back to the conquest of the Gaule by Jules César and further the Roman occupation.

The terroirs from the region are characterized by a clay-limestone soil or a more gritty soil with rough gravels. The appellation also benefits from a temperate oceanic climate.

The appellation Cadillac is characterized by wines produced respecting the Bordeaux traditions concerning the dessert wines : quite late grape harvest, wine making of small volumes with a limited return as well as a bottling in the castle. Therefore, it only regards dessert wines.

Concerning the aroma’s and the taste, Cadillac wines are close to Sainte-Croix-du-Mont wines regarding the ease, the elegance and notes of fruity aroma’s : vanilla, acacia, apricot and even honeysuckle. Regarding the robe and the colour, Cadillac wines are rather gold yellow and topaz. These wines can be dispatched with a good foie gras or with Roquefort cheese.

In due course, the matter of the Cadillac wine becomes more unctuous and more molten, which permits to consume and dispatch them when they are more mature. The aging potential differs according to the quality of the vintage as well as the talents of the winegrower. That way smaller vintages can be conserved during a period of 10 years or more in case of better vintages.

Concerning the vines, the most important grape varieties are Sémillon, Sauvignon and Muscadelle.
