2011 Les Serpentières, Domaine Pavelot, Bourgogne, France, Savigny-les-Beaune 1er Cru

The Domaine Jean-Marc & Hugues Pavelot, based in Savigny les Beaune is a property that has been passed on from father to son for generations. The Domaine Pavelot now reaches an area of 12 hectares in different «climats».

With the primary aim to return to a healthy harvest full of quality, vigilant care is given to the vineyard throughout the seasons.

The soils are cultivated by regular plowing between June and July. Protection of the vineyard is part of a reasoned agriculture management program. The essential control of the yield is achieved through strict pruning, a targeted and limited fertilization.

This wine is produced on a very small vineyard of 0,17 hectares and the production is limited to 900 bottles. The average age of the vines is around 60 years.

Facing south, the vineyard is located at the middle of the hill and has a moderate slope. The soil contains marl and is deep with a few sharp stones. The name "Serpentières" has certainly originated in the past presence of large snakes attracted to the vicinity of a few sources.

The harvest is done manually with good maturity, total destemming and soft crushing.

Matured during 12 months on barrels, 25% new barrels.
