2009 Château Maine-Pascaud, Bordeaux, France, Cadillac
Cadillac is a French wine appellation of origin produced by twenty-two municipalities around Cadillac. Together with Loupiac and Sainte-Croix-du-Mont, they form a small region producing sweet wines in the heart of Entre-Deux-Mers , in the Bordeaux vineyard.
In the southern region, ‘Entre-Deux-Mers’, Olivier Metzinger works with a great passion for Bordeaux wine.
This sweet white wine with appellation Cadillac is harvested manually at the end of the harvest season. This sweet wine AOC Cadillac is vinified from fruits which developed Botrytis cinerea or the noble rot. This fungus feeds itself with the water of the grape, thus concentrating the flavours and sugar in a natural way.
