2009 Château Cadet Bragard, Saint-Emilion Grand Cru, Bordeaux, France, Saint-Emilion
The Chateau Haut Cadet is located at the northwest of Saint-Emilion in the heart of one of the most beautiful land of the appellation surrounded by grand crus classés. The soil is composed of siliceous sands and clay in the subsoil.
The vineyard is planted with 70% Merlot, 20% Cabernet Franc and 10% Cabernet Sauvignon, with an average age of 30 years.
Work in the vineyard is rigorous in order to produce 45 hl per hectare. Disbudding and stripping are systematic. If necessary a “green” picking ensures a balanced and ripe harvest. A computerised traceability carries through to each stage of the process, from vine to the cellars.
After a period of 6-7 days cold maceration, alcoholic fermentation takes place at a maximum temperature of 28° to ensure a supple, silky and fleshy wine. Malolactic fermentation is carried out in tanks, before transfer to barrels each December. The wine matures for 70 % on barriques, each year 1/3 is renewed. 30 % is matured on inox tanks to assure the fresh fruit taste of the terroir.
